The dough for our stuffed gnocchi is made using the best potato starch and triple 000 flour. dusted with rice flour, and dried superficially in pre-wrapping to give consistency and excellent stability during cooking. While the filling is made always trying to reach the consistency necessary to make it tasty and stringy.
